Substitutions Guide
Korean ingredient substitutions
No Korean grocery store nearby? Here’s what to grab at your local supermarket instead.
Gochugaru
Aleppo pepper gives a close sweet-smoky flavor. Regular chili flakes work but taste sharper and hotter.
Doenjang
Miso is milder and slightly sweeter, but the fermented depth is close enough for soups and stews.
Napa cabbage
Similar crinkled leaf texture that holds up well in kimchi and soups
Korean short-grain rice
Both are short-grain and sticky, sold at almost any US supermarket.
